Oil mill
In Saint-Paul de Vence, olive oil was used in all sorts of ways in daily life until the beginning of the 20th century - in lamps and to preserve perishables, for example, before the arrival of electricity. Sold to soap factories in Marseille, olive oil also constituted one of the pillars of Saint-Paul de Vence's economy.
An inventory of the village drawn up in 1730 states that Saint-Paul de Vence boasted five bread ovens, five oil mills and two flour mills. An aqueduct conveyed water to drive the mill wheels.
